The Sangiovese vineyards are about 30 years old and are cultivated at an altitude between 200 and 300 meters above sea level, with a northeast exposure, on sedimentary soils of ancient marine origin, rich in pebbles and fossils. The the harvest is carried out manually with a slight advance and the best bunches are gently pressed with a brief contact with the skins. The must is vinified in white in stainless steel tanks at a controlled temperature of 25-30 °C, using only indigenous yeasts.
